Hi I'm Christopher Cipollone, we're here at Piora in New York City 430 Hudson Street and we're going to make our monkey bread. The one thing about this recipe is you could do it at home, it's a very simple bread recipe. There's no starter it's just straight to risen dough. To start the monkey bread we have about a quarter cup of water, we add it to our yeast. This is going to start activating it and we give it a little pinch sugar because yeast really likes something to chew on and it'll start bubbling up that's how you.
Know the yeast is doing its thing. We put that in a warm place. In the meantime we take our liquids milk, shortening and sugar and this we begin to heat. We take it to about 190 degrees. You don't wanna boil this, you don't want to scald the milk. And then we just cool it down, then add the yeast to the liquid. Slowly add your liquid. Now that we've got our liquid incorporated into our first batch flour this is where we have to let it do its first proof.
You'll see it rise and then we're gonna punch it back down and add the rest the flour.
